"Stories about food show a strong connection."

Well, I finally got up the nerve to start a blog and share my thoughts with those who care to read them. I have always been wary of starting one as I have thought to myself so often, "Why would anyone really want to read about what I am thinking or doing?". This thought process came to a crashing hault a few weeks ago.

Most of you who know me know that my husband, Matt, and I lived in Connecticut from July 2004 to December 2008. While living there, I had the great privilege to work for Yale University's Surgical Dermatology practice. My dear friend, Rosy Cruz, whom I shared very close working quarters with for two years there has been my inspiration for commencing my life in the blog world. A few weeks ago, she told me that she thought I should begin a blog to share with others my thoughts, philosophy and sheer love for food and nutrition.

She and I formed an instant bond almost from the first few minutes of sharing an office together. We still laugh that people just don't really "get" us as one crazy white chick and a totally Puerto Rican chick. It didn't take long before she and I began a discourse on food and nutrition. She and I have very different backgrounds. She grew up in a Puerto Rican household with standard Spanish food. A typical meal consists of beans and rice, corn and pork shoulder. This is where the title for my blog comes in. One day we are talking about her diet and how I think she might change how she and her family eats to be more healthy. As I am talking about salt and carbohydrate intake, she (with sadness in her voice) says, "Corn isn't a vegetable?!" I laughed and told her that despite it commonly being thought of as a vegetable, it's really more of a grain due to the high level of starch which converts into sugar. So, I was sorry to tell her that eating corn was almost like eating more rice. Our talks on nutrition built upon that conversation. Within time, she had her family eating tofu in their spaghetti, and they didn't even know it! So, Rosy, thank you for being my inspiration and for trusting in and following my opinions in your own life.

To be entirely honest, I have not completely decided on how I am going about this blog other than sharing my experiences and hope that it will impact anyone who reads it in a positive way. :)
